I could eat this stuff by the bowl. I love using it as a dip, but mostly as a spread for wraps and sandwiches (Guacamole Grilled Cheese, anyone?).
3 large avocados, pitted and peeled
1/2 cup red bell pepper, diced
1/4 cup Thai or regular basil, chopped
1/4 cup mint leaves, chopped
4 green onions, diced
1-2 inches of ginger root, peeled and diced
1 tbsp lemongrass, minced
2 tbsp lime juice
1 tbsp soy sauce or tamari
1 tsp finely diced Thai green chiles
Mash avocados and mix in other ingredients. Find very large spoon.
