Thai Guacamole


I could eat this stuff by the bowl. I love using it as a dip, but mostly as a spread for wraps and sandwiches (Guacamole Grilled Cheese, anyone?).

  • 3 large avocados, pitted and peeled

  • 1/2 cup red bell pepper, diced

  • 1/4 cup Thai or regular basil, chopped

  • 1/4 cup mint leaves, chopped

  • 4 green onions, diced

  • 1-2 inches of ginger root, peeled and diced

  • 1 tbsp lemongrass, minced

  • 2 tbsp lime juice

  • 1 tbsp soy sauce or tamari

  • 1 tsp finely diced Thai green chiles

Mash avocados and mix in other ingredients. Find very large spoon.
